
I really love meatballs. They can be served with more than just your traditional pasta, are a great way to use ground meat and are super easy! My favorite part – you can make them your own in all ways possible. Without further hold up…. my Greek-ish meatball recipe!
Ingredients:
- 2 lbs. ground beef
- 1 lb. ground pork
- 2 Tbsp. parsley (dried or fresh-chopped)
- 1 Tbsp. oregano (dried of fresh-chopped)
- 1 shallot, finely minced
- 4 cloves of garlic, minced
- 1/3 cup Italian style bread crumbs
- 1 egg, beaten
- 1/2 tsp. ground mustard
- Salt, pepper, granulated garlic to taste
Preheat oven to 375* F. Line a baking sheet with parchment paper. Mix all ingredients together in large mixing bowl. Working with your hands is the best way to thoroughly mix meat + ingredients. Using hands, roll into equal size meatballs. I make mine bigger, to yield around 15 meatballs from 3 lbs. meat. Place meatballs on parchment lined baking sheet. Once oven is heated and all meatballs are rolled, bake at 375 for 25-30 minutes or until inside is done.
Optional** Top with crumbled feta cheese before serving or mix in 1/3 cup feta cheese into meat mixture. Serve with tzatziki sauce on the side.
Serve with a side of orzo and tossed salad.
