No meal is complete in our household without a tossed salad. We are the family who battles over who makes the best vinaigrette dressing, hiding our “secret ingredient” so others can’t steal the idea. A little much? Maybe…BUT it is so good that we never have any left over. My recipe is below; however, I encourage you to add your own spin on it and then let me know what you like best 🙂 

Tossed Greek Salad

  •  Romaine lettuce, cut into bite size pieces
  • Tomato, sliced or diced (personal preference here)
  • Cucumber, cut into bite size pieces
  • Red onion, sliced 
  • Feta cheese, crumbled 
Dressing
  • 1/2 cup olive oil
  • 1/4 cup golden balsamic vinegar
  • 1 Tbsp. red wine vinegar
  • Granulated garlic
  • Salt
  • Pepper
  • Garlic pepper
  • Dried oregano
Mix lettuce, tomato, cucumber and onion in a large bowl.  Combine all dressing ingredients in a jar or small, stainless steel bowl.  Shake or whisk dressing, rapidly to combine well.  Immediately pour dressing over and toss to coat.  Sprinkle feta on top and enjoy! 

 

Notes: I never measure my seasonings. I start by sprinkling a little of each, mixing then tasting to see what to add. If you are the type of person that needs measurements, I would start with 1/4-1/2 tsp of each. Also can substitute any vinegar that you prefer, but I strongly encourage you to try the golden balsamic! I love cutting grapes in half and adding them to the salad for a sweet pop or avocado for creamy goodness!
